I currently use some carbon soled MTB shoes with M520s.  Would I honestly notice any difference if I switched to a road shoe/pedal system?

If you’ve got the money or if you find an awesome sale (which I did), try the DMR Vault Magnesium Superlights. Mg body and Ti spindle make for 290 gram pedals (that’s for the pair). They have a large platform and amazing grip, so they definitely work for big downhills. The only drawback is they have a 85 kg (188 lb) rider’s weight limit. So they don’t work for bigger riders. Plus, DMR’s quality control has been poor on these, so you may have to rebuild them once to get them right. There are also some nice nylon pedals out there. RaceFace Chesters (340g) and Black Ops (375g) are nice light weight options that are durable and don’t lose their color over time. I think many of the colors with the nylons look kind of cheezy, but the solid black looks great from beginning to end imo. Plus, they are not expensive and perform very well. If you like black colored pedals, I don’t there is any better option for the price than the nylons. Plus you won’t have to hear that terrible “ching” when your pedal strikes a rock.

The sky was grey, thick with low hanging clouds, rain was a virtual certainty. Normally I am one to beg off at the slightest hint of rain, find something else to do, preferably indoors. But it was the last day of a brief visit in the Italian Dolomites and no one wanted to waste it hanging around the hotel, not even me. It kept the rain from coming in and let my sweat out. I actually enjoyed myself, rather than suffering through what would have been misery. To me that’s the magic of the Idro and its Gore Shake Dry fabric, letting me ride when I otherwise couldn’t or wouldn’t. The winter glove issue has been addressed by Shimano by increasing the paddle/ shifter button sizes, plus of course having the fully customisable options through e-Tube. So again, not really an issue eh? 

So they take a long time before you can use them with confidence, they are mechnically delicate (even before you factor in mechanism wear from putting your foot down at lights/walking in them, vs replacing a plastic cleat) and the real advantage – is this a real advantage* – comes when you are pulling away from the lights. [If I am riding my road bike the number of times I stop is pretty small, so marginal benefit of marginally faster engagement - I think I'm pretty good with my Keos - probably not so important for me. YMMV.] This is before you get to the fact that they are quite expensive (because they aren’t very popular so unit volumes not high) and (again because unit volumes not high) finding spares is a pain in the arse. I tried them and wouldn’t recommend them to anyone.

There isn’t a triple option for EPS. In fact I don’t think there’s a triple option for any e-shifting system.
